Spiced Plum Soup 60mins
Serves 4-6 Hot Cold Vegetarian Fruit Soup Starter Gluten Wheat free
Instructions
675g/1-1/2 lb Ripe Dark Plums, halved and stoned
A strip of Orange Zest
240ml/8fl.oz. Orange Juice
¼ teasp Ground Cardamom
A pinch of ground Cloves
¼ teasp Ground Cinnamon
90ml/3fl.oz. Honey
90ml/3fl.oz. Natural Yoghurt
1 teasp Balsamic Vinegar
4 teasp Natural Yoghurt to serve
Instructions
1. Place the plums, orange zest and juice, cardamom, cloves, cinnamon and honey in a saucepan, bring to the boil, stirring, then reduce heat, cover and simmer for about 30 minutes, or until the fruit is very soft.
2. Remove the pan from the heat and allow to cool a little before transferring the mixture to a blender. Blend to a very smooth puree.
3. Return the soup to the rinsed out saucepan and reheat gently, adding the yoghurt and a little more orange juice to attain your desired consistency.
4. Remove from the heat, add the balsamic vinegar and mix well. This soup can now be chilled if you want to serve it cold.
5. To serve (hot or cold) - transfer to small soup bowls and swirl a teaspoon of yoghurt into each bowl."
Sounds quite nice!

4 Large raw Beetroot, diced
1 Large Onion, sliced
1.1L/40fl.oz. Vegetable Stock
The juice of 1 Lemon
1 tbsp Sugar
Salt and Pepper
120ml/4fl.oz. Sour Cream
Instructions
1. Place the beetroot and onion in a large saucepan, just cover with water, bring to the boil then reduce the heat and simmer for 1 ½ hours.
2. Remove from the heat, add the lemon juice, sugar, salt and pepper and mix well. Cover and leave for 8 hours or overnight.
3. Strain the soup and return the liquid to a clean saucepan together with the stock, bring to almost boiling point then add the sour cream stirring well. Serve hot."

Fresh Plum Cake
12oz sr flour
1/2tsp salt (that's half, not one or two btw)
2tsp cinnamon
6oz marg
3oz+ 2tbsp soft brown sugar
3oz sultanas/raisins
1lb plums (Victorias are good)
6tbsp golden syrup
3 eggs
Sift flour,salt & 1tsp cinnamon into large bowl. Rub in marg until mixture resembles breadcrumbs. Stir in sultanas & 3oz sugar.
Cut plums into halves. Save ten halves for top of cake and chop rest finely.
Beat syrup and eggs together & add to flour with the plums. Mix well.
Pour into tin and arrange plums on top.
Mix remaining 2tbsp sugar & 1tsp cinnamon. Sprinkle over top.
Bake in 8" round tin for 2hrs or 7" x 11" rect tin for 1- 1 1/2 hrs.

Seeing as I went off thread here's a soup recipe to put us back on track.
Armenian Soup
2oz red lentils washed
2oz dried apricots washed
1 large potato
2pt vegetable stock
juice of half a lemon
1tsp ground cumin
3tbsp chopped parsley
salt & pepper to taste
Place lentils and apricots in a large saucepan.Roughly chop the potato and add to the pan with remaining ingredients.
Bring to the boil, cover & simmer for 30min. Allow to cool then blend until smooth. Reheat to serving temp & adjust seasoning to taste.
It's very tasty and just a bit different. I haven't made it for ages but that's just put me in the mood for it.
